    La chicorée est la partie ou racine séchée de la plante Cichori-μm glandulosum Boiss. Et Huet ou chicorée Cichorium intybus L. de la famille des Asteraceae. Il est riche en protéines, vitamines, carotène, calcium, phosphore, zinc et autres oligo-éléments. La chicorée est un végétal de santé thérapeutique alcalin reconnu mondialement, a été annoncé par les Centers for Disease Control and Prevention des États-Unis comme l’un des «world' S les dix premiers légumes nutritifs».
