    Galacto oligosaccharides powder is a straight-chain or branched oligosaccharide formed from lactose as raw material, by the action of β-galactosidase, by 2-9 galactosyl and 1 terminal glucose through β-1,3, β-1,4, β-1,6 glycosidic linkage. Oligogalactose has good water solubility, and its sweetness is 0.3-0.6 times of sucrose. It is acid- and heat-resistant, and will not be denatured if kept at pH 3 and 160 ℃ for 15 min.

     

    It has been shown that different sources of β-galactosidase directly affect the degree of polymerisation of oligogalactose, the type of glycosidic bond and the yield of oligo galactose. Changes in the degree of polymerisation and type of glycosidic bond determine the structure, active behavior, and prebiotic properties of oligogalactans. β-1,6 and β-1,3 glycosidically linked oligogalactans exhibit strong prebiotic properties.
